Core Purpose
Meatwise is a system for managing red meat costs and gross profits. Its primary objective is to accurately calculate the cost price of various meat cuts, whether they are primal cuts, retail cuts, or buy-in cuts. This information is crucial for setting selling prices of cuts and recipes once they are prepared and packaged, ensuring they meet a specified margin that guarantees gross profitability. This approach covers overhead costs and expenses to ensure a net profit (return on investment). These outcomes are continuously monitored through a trading account within the organization.
Desktop Application.
Utilize state-of-the-art block test calculations during the deboning or separation process of final trimmed primal cuts from various species of red meat carcasses. Establish linked sub-block tests (Parent-Child relationships) using data derived from the initial primal cuts block test. This allows for the further deboning, cutting, and trimming of these wholesale primal cuts into a diverse array of specified retail and value-added cuts tailored for consumer outlets.
Compile a comprehensive list of recipes for all value-added products. For each recipe, detail the weights of all meats and ingredients, and specify the necessary packaging requirements. Include the costs associated with meat cuts, considering any expected weight losses, along with the costs of additional ingredients and packaging materials based on current pricing. Calculate the total cost of each recipe, factoring in all components of production. Additionally, determine a suitable profit margin and establish the selling price for each product based on the total cost.
Based on the origin and contribution of weight, calculate a weighted average cost for any primal (e.g., Trimmings 80/20) or secondary retail cut where there are multiple block tests yielding various cost prices for the same item, as well as different buy-outs of the same item. All items are consolidated into a single inventory (BIN) with different PLUs and product descriptions for sale or further processing (e.g., using Trimmings 80/20 to make Boerewors).
After determining all meat block test cost prices, users can review and update the latest purchase prices for carcasses or quarters. MeatWise utilizes this functionality to centrally update cost prices for all primal and retail cuts. Based on specified profit margins and VAT settings, corresponding selling prices are calculated and adjusted accordingly across all block tests. All recipe prices, including costs for meat, ingredients, and packaging, are automatically updated once the trading account purchasing module is activated and configured. Users only need to review profit margin and VAT settings if necessary. Finally, a .csv file can be exported to your POS system and your network's weighing scale software for updating scale prices and facilitating label printing.
Some cuts may not undergo block testing or may be impractical to test. With this feature, users can associate such cuts with others that have undergone block testing and share similar cost and selling price characteristics. This allows the non-tested cuts to inherit the pricing details of the selected cut.
